Vegan Smokey Mac N Cheese

(2) 16oz boxes of pasta of choice
1/4 Cup  @miyokoscreamery or butter of choice + 4 Tbs for stirring in post drain
1 Cup cashews + 1C water—blended until smooth
1 Cup @followyourheart Mozzerella
1 Block Smoked Farmhouse Cheese Wheel I personally love @miyokoscreamery but you can sub this with an additional 1 C of any vegan cheese of choice
1 Cup unflavored unsweetened dairy free milk of choice
1/4 tsp pink salt or to taste
1/4 tsp pepper

  1. In a large skillet, turn the heat to Med/High and heat the 1/4 C butter. Add the Mozzarella and let it melt.

  2. In the meantime, add to your high speed blender, the cashews, water and Smoked Farmhouse Cheese Wheel. Blend on high until smooth.

  3. Pour this mixture into the pan and add your plat milk. Taste, then add salt and pepper to your liking. This is also really good with peas!
